Our Chef
Xavier Aubel,
This famous chef from the valley worked for many years alongside Emmanuel Renaut as chef at Le Bois Prin.
Now he and his team are taking charge of the kitchen at L’Index!
A chef with a passion for local cuisine and a love of his mountain region, Xavier remains curious about culinary discovery, imagining flavours with the greatest respect for the product and its producers.
